- Extra virgin olive oil – two tablespoons
- Celery – one rib, large in size, chopped
- Garlic – one large clove, chopped
- Shallot – one large piece, chopped
- Carrot – one piece, chopped and peeled
- Onion – one small piece or half of a medium bulb, chopped
- Tomato paste – three tablespoons
- Whole Peeled Tomatoes – one can or about twenty-eight ounces.
- Basil leaves – twelve large fresh leaves, divided
- Salt – one half of a teaspoon
- Mozzarella cheese – one cup, shredded
- Parmigiano-Reggiano cheese – one half of a cup, freshly grated

Fire up the oven and preheat it to about four hundred degrees Fahrenheit or about two hundred five degrees Celsius. In a large wok or skillet over medium heat, pour some oil.
Throw in the shallot, celery, onion and carrot and fry for about five to six minutes. Until you notice that the contents are tender and soft while occasionally stirring to ensure that all sides, nooks and crannies are cooked evenly.
Pour in the tomato paste and continue to let it cook for another minute or so, mixing as you go. Open up the can of peeled tomatoes and pour it in the wok or skillet, including the juices within. Get a baking dish, preferably one that is made of either ceramic, glass or metal. With dimensions of about thirteen inches of length by nine inches of width. Lather and evenly spread the two cups of sauce in the bottom. Ensuring that it is evenly distributed and leveled in the baking dish.
Get the frozen ravioli and distribute it equally over the sauce, and for the remaining sauce. Pour the rest of it over the evenly-spread frozen ravioli.
Seal the baking dish securely and tightly with aluminium foil. Place the baking dish in the preheated oven and let it bake for about thirty minutes.
After it has baked, remove the baking dish from the oven. Do not turn off the oven yet as we are not done! You will only spread the rest of the cheese and place it back once you are done.
